Lemon Curd Bars



Lemon Curd Bars
Nuts are best when soaked and dehydrated, but I’ve used both raw and soaked nuts with good success in this recipe.
Makes 16
1 recipe of tangy lemon curd (Save extra zest for the the cookie base).

1 cup of raw almonds
1 cup of raw cashews
1/4 cup honey (These are very lightly sweetened. If you want the bars sweeter, you could up this amount)
1/2 cup of melted virgin coconut oil
2-4 teaspoons lemon zest
2 eggs
1 teaspoon sea salt
1-Preheat the oven to 400 degrees and make the lemon curd. Place the curd in the refrigerator to cool.

2- Place the almonds and the cashews in a food processor. Grind them into a medium fine “flour”. You don’t want to turn it into a nut paste, so don’t over do it. There will still be little chunks here and there.

3-Add the rest of the ingredients and pulse until combined.

4-Evenly spread the nut batter into a greased 8 by 8 pan. Place in the middle of the hot oven. It will take between 15 to 18 minutes to cook. It may puff up as it cooks, but don’t worry, it won’t stay that way once you take it out of the oven. When the top is lightly brown, and a toothpick comes out clean when stuck in the middle, it’s done.

4-Cool completely, then spread one recipes of lemon curd on top. Let set in the refrigerator for at least several hours. The curd will continue to set, and we liked it even better the next day. When ready to serve, take them out and cut into squares (16 bars worked well for us), and serve.

Banana Nut Bread.......



Hey look, someone found Cousin It from the Adams Family!!
Kellie, here is the long overdue Banana Nut Recipe you've been wanting! Now, I know you won't bake it yourself, so I should probably apologize to Kyra for posting this beacause she is the one who will become the kitchen slave for you!

Ingredients:
2 Cups Almond Meal
1/2 tsp. Baking Soda (I use the aluminum free stuff)
1/2 tsp. Baking Powder
(I've actually made this w/o the baking powder, just didn't rise as much)
1/2 tsp. Cinnamon
2 Large Eggs (cage free, of course!)
2 Medium ripe Bananas
1/4 Cup of Honey (melted, raw)
1 tsp. Organic Vanilla Extract
1/2 Cup of Walnuts (I've use Pecans also, very good!)
1/2 tsp. Cocnut oil (or whatever you use to grease the pan)

Pre-heat oven to 350 degrees
Using Coconut oil, grease bread pan
In a mixing bowl, smash Bananas until no longer lumpy.
Add in all other ingredients, except nuts, mix well by hand
Add nuts, stir well
Pour into Bread pan and bake 45 -60 minutes, checking at 45 minutes with a toothpick insterted in the middle of the bread, if toothpick comes out clean, it's done.
Allow to cool before removing from the pan.

Definitely satisfies any cravings for baked goods!! Yum!!

No Bake Cocoa Macaroons..........

So, this last 30 day Nutrition Challenge hasn't gone all that great for me! I have to say that I have NOT been 100% dedicated to Paleo! 80 to 90% is more realistic!
Not that I have had cravings for anything "bad" because I haven't, however, I have made some poor choices. Popcorn last weekend at the movies was the worst choice! Man I felt like doo doo that night!
So, in an attmept to make myself feel better, I have spent this last week experimenting with a few new recipes.......this one is pretty simple, but I have to admit, I am not really a coconut flake fan, but nonetheless, these babies aren't too bad!!

No Bake (Mostly Raw) Cocoa Macaroons Makes 15-18, 1/2 inch balls

1/2 cup of Artisana coconut butter (or raw coconut spread)
1 tablespoon cocoa powder (raw, organic of course!)
1/2 cup of coconut flakes
2 heaping teaspoons raw honey
2 tablespoons coconut oil, gently melted
In a food processor, blend the coconut butter, cocoa, honey and gently melted coconut oil. Blend until well combined. Add the coconut flakes and blend until just combined.

Drop spoonfuls (about 1/2 inch diameter) onto a parchment paper lined plate. Place in the freezer ten minutes to firm up and serve. Keep in the refrigerator.

Lynn's Sultry Seviche........


Lynn and Chuck have become dedicated
Crossfitters over the last 6 months or so.
They fit right in with the rest of us
competitive freaks!





1 ½ Pounds of firm white fish cubed
Juice of 3 limes
¼ tsp. salt
¼ tsp. fresh ground black pepper
2 tsp. Oregano, crushed using a mortar and pestle
1 large Onion finely chopped
3 large tomatoes, diced and peeled
1 can (4ounces) diced green chilies, drained
1 jar (2 ounces) pimentos, diced and undrained
½ cup of Salsa or Taco sauce
Salt and Fresh Ground Pepper

Place cubed fish in glass, dish and squeeze lime juice on
it. Sprinkle with garlic salt and freshly ground black
pepper. Cover and refrigerate overnight.
Add all remaining ingredients, with seasoning to taste.
Mix well and refrigerate 3 more hours before serving.
Serve as a first course as you would serve a seafood
Cocktail, use as an hors d'oeuvre with tortilla chips for
Dipping, or serve as a cold seafood salad on cold, crisp
Lettuce leaves on chilled plates. Makes 6 to 8 servings.

Almond Muffins

Almond muffins

1 cup almond butter
1 cup sliced raw almonds
1 cup pure coconut milk
2 cups shredded unsweetened coconut
3 eggs
Beat and pour in muffin cups.
Cook at 400 for 15 minutes.

Laura's Yummy Paleo Pancakes!

2 tbsp melted raw butter
2 tbsp coconut or almond flour
1/4 tsp baking powder
3 eggs
1 tbsp pure maple syrup


Mix all ingredients then pour and grill. Top with pure maple syrup. I also like to add bananas or no sugar added apple sauce

Chris: IN the ZONE...Chicken Parmesean



Chris never quits, never gives in, and always gives it 110%! It's been awesome to wistness his dedication and determination!
NOTE: He has the same grimmace on his face too! (just one more freakin push up!)






4 blocks of chicken3 blocks of spinach noodles
1 block fresh spinach
4 table spoons of low sodium spaghetti sauce
1 egg
2 cups of almond meal
2 table spoons of Parmesan cheese

directions:

Preheat oven to 350 degrees. In a bowl whip the egg with a fork or whisk. In a separate bowl mix the almond meal, Parmesan cheese and Italian seasonings to taste. coat the chicken breast with the egg then roll in the almond meal until it is covered with the crumbs. Place the chicken on a cookie sheet. Put in the oven for 12 minutes flip the chicken and put back in oven for 12 more minutes.


While the chicken cooks prepare the spinach noodles.

Place the fresh spinach on a plate then the noodles on top. Then place the chicken on the noodles and the sauce on top of the chicken. sprinkle a light dusting of Parmesan cheese on it all.

Lindsay's, Paleo Ultimate Fish Tacos


Kickin some butt and taking no prisoners, Lindsay is one of the young hot chicks at OCF that keeps us old ladies on our toes! I hear she's a pretty good runner... I say "hear' because I despise running and try to hide when that word is used!







Paleo Ultimate Fish Tacos

1. 2 pounds mahi mahi (skinned, boned, and cleaned)
2. Sea salt and freshly ground pepper
3. 1/2 head savoy cabbage, finely shredded (I just used red cabbage)
4. 1 bunch cilantro
5. 3 limes, cut into wedges for garnish

Pink Chile Mayonnaise
1. 1 cup mayonnaise (make sure that it is free of soybean oil and trans fats–you could also make your own)
2. 3 chipotles in adobo, plus 2 tablespoons of the adobo sauce
3. 1/2 lemon, juiced
4. Sea salt and freshly ground black pepper

Mango Salsa
1. 1 ripe mango, peeled, pitted and diced (about 1 cup)
2. 1/2 medium red onion, finely chopped
3. 1 jalapeno chile, minced (include ribs and seeds for a hotter taste if desired)
4. 1 small cucumber
5. 2 Tbsp fresh cilantro leaves, chopped
6. 3 Tbsp fresh lime juice
7. Salt and pepper to taste

Fish. Preheat oven to 400 degrees F, and season fish with salt and pepper. Place on an ungreased baking sheet, and cook for approximately 13 minutes.

Pink Chile Mayonnaise. Dice adobes until very fine–almost a paste. Add to mayonnaise, and stir in lemon juice, salt and pepper. Refrigerate until ready to use. (Note: the original recipe called for 1 cup sour cream as well, but I simply omitted it. If I had raw sour cream on hand, I wouldn’t be afraid to add that to the recipe. Just remember that such things are not Paleo, so they should usually be avoided. My personal philosophy, however, allows limited quantities of RAW dairy such as butter and sour cream.)

Mango Salsa. Combine all ingredients in a bowl. Season to taste with salt and pepper.

Courtney's Paleo Pizza




Courtney has been at Oceanside Crossfit for a few months now and this girl seriously kicks some butt! I am definitely keeping an eye on her, it's only a matter of time before she outlifts this granny!


Ingredients

1 1/4 lb ground turkey
1 egg or egg white
2 Tbsp Almond meal
2 Tsp dried basil
Olive Oil

Preparation

Preheat oven to 450 and oil pan lightly with olive oil
Mix: Turkey, egg, almond meal and basil. Pour onto pan and press flat (about 1/2 inch thick). Bake for 10 minutes.

Add a sauce (without sugar). I used organic tomato sauce. Apparently there are pizza sauces without sugar, but I didnt find any. Use whatever veggies you like on pizza. I use fresh basil, spinach, more tomatoes, onion and mushrooms. Bake an additional 10 to 15 minutes. I top it with crushed red pepper to make it extra spicy!

Ken's Famous Beef Jerky and Crock Pot Meal....


Ken is a dedicated crossfitter at Oceanside Crossfit, who promises that if you eat his crockpot meal you won't look like this! Paleo is guaranteed to NOT make you look like this!

Beef Jerky
- Beef, slice into thin slices (London Broil is good to use, you can also use Rump Roast)
- Use any BBQ of your choice.
- Add some honey (optional)
- Add another other spices (NO SALT)
- Marinate for about 1 hr the place on dehydrator, if you don’t have one the go buy one. You can use a oven but you will have to look on line for that information
- Check on jerky about 4 hrs and then every hour after that. If you leave on to long it will be DRY DRY.
- Here are some good websites for beef jerky. (http://microwebtech.com/, www.recipezaar.com/recipe/Homemade-Beef-Jerky-42272)
- Yes it is easy to do and takes little effort

Crock Pot Meal
- Chicken (about 3 to 4 chicken breast)
- 1 Can Stewed tomatoes with spices
- 1 can of diced tomatoes with spices
- Some baby carrots
- Some cucumbers (sliced)
- Some green and yellow squash
- Black Pepper (you can add other spices if you wish)
- Frozen Broccoli (small chucks, not the large ones)
- Put in crock pot and turn on low when you leave for work in the morning. When you return from work about 4:30ish it will be done and time to eat dinner. You can save some for lunch for the next few days.

Forgive me Paleo, for I have sinned............


Forgive me Paleo, for I have sinned! It has been a few weeks since I fell off the Paleo wagon, well not completely, but close! Amazing how life happens, schedules get changed and before you know it, old habits come back into play! For the most part, we stuck with Paleo on a daily basis until a few weeks ago. A visit to see old friends in Arizona was the beginning.....Then the was New Orleans, Jazzfest....there my friends, is the ultimate temptation of ALL things BAD! Too much good food NON paleo friendly food! Binguet's (those doughy powdered sugared evil little monsters!)Then there's jambalaya, gumbo, craw fish ettouffe (probably spelled that wrong)..the list goes on and on, not to mention Alcohol! No shortage of that in N'awlins!!!
Needless to say, here I sit, paying my penance with 5 extra pounds gained, bloating, irritability (poor Steve) and wanting to kick myself for letting this happen! But today, is a new day! Today, I make a stand, step back up on the Paleo wagon, strap myself in and prepare to enjoy the ride.......it can only get better!
Tonight is "Recipe" night at Oceanside Crossfit. We will be participating in another Paleo challenge, this one 30 days, starting 5/17 and ending 6/17. Tonight the congregation will meet and we will share our success' our failures (I will hang my head in shame appropriately) and then we will exchange recipes, take note of who says they are committing to the challenge and then spend the next week preparing and purging. Be ready to see some great new recipes posted! I looking forward getting back to normal! Stay tuned.........

Paleo: My New BFF!!

Well, as of yesterday, March 4, 2010 the Oceanisde Crossfit Nutrition challenge has come to an end....or has it?


Yesterday was to be the First day off the challenge, I have to admit, I had a hard time thinking about spending a day without my new found friend Paleo! The one or two times I thought of hanging out with my old friends, potato chip and popcorn, pizza and even enchilada, I realized they are NOT really my friends, they're empty and shallow, my past relationship with them had no substance, no meaning, and all they have ever done is cause me grief. I realized how in the past, I always made excuses for them, I always defended them. Not once did they ever do anything good or nice for me.......What did I ever see in them?

My new friend, Paleo, is incredibly satisfying, gratifying and even indulgent! Paleo is never shallow, Paleo always provides substance and meaning. Paleo gives me gifts, like strength and power. Paleo always puts me first, gives me lean muscle and only takes unwanted things from me, like fat! How kind and wonderful is that!

During my our first 30 days together, Paleo did take a few more things from me, but I am good with those things being gone from my life. Because, what Paleo gave me in return, is far better than what was taken!
Things taken:
2 inches from waist
8lbs
Fatigue
Digestive issues
Bloating and abdominal distension

Gifts Given:
Strength
Endurance
Energy
Lean muscle mass
Appreciation for GOOD food!
These are just a few of the big gifts......... I could go on forever....

So, I think my friend Paleo is here to stay......... That's not to say that I won't visit with the old crew once in a while, but I definitely will think about whether or not the consequences are worth a short lived visit with them.

Kaytlyn's Carnitas Tacos, Paleo Style!

Well it's been quite a while since we started the nutrition challenge at OCF, 53 days to be exact! The 7 day count down to the 60 DAY mark begins....... Although, I must admit, I will likely continue in the way of "Paleo"!

Even Kaytlyn, my daughter has pretty much converted to the Paleo lifestyle. After battling with digestion issues all her life, and realizing that her daughter, Jaydin Lilly, (my sweet little princess grand daughter) was starting to suffer the with the same, Kaytlyn decided to change her eating! For the most part she has cut out dairy, grains and legumes, and guess what! No More intestinal cramping or digestive issues!! And sweet little Jaydin Lilly is doing great as well!

She even came up with a great tasting Paleo Carnita's Recipe


Ingredients:
2lb. (small) Pork Sirloin Tip Roast (or any lean cut of pork roast)

Celery (couple stalks)

Carrots (one or two)

Cilantro (to taste)

1/4 to 1/2 and Onion (to taste)

Salsa Verde (7 to 8 oz. depending on size of Roast

Salsa Rojo (for you gringo's, that just regular salsa, the red kind!)

Iceberg Lettuce



Place the Pork Roast in the crock pot

Finely chop, Celery, carrots, onion and cilantro, throw on top of pork roast in crock pot.

Add Salsa Verde, and Red salsa to taste.....if you like it spicy add more, mild add less!

If you wish to make a larger batch, just use a larger pork roast and adjust the rest of the ingredients accordingly.......it's not rocket science. :-)



Depending on the size of the pork roast, crock pot cooking time can vary from 6 to 8 hours.
The 2lb roast I made only took about 5 1/2 to 6hrs.

The meat should shred easily with a fork.


Gently separate the Iceberg lettuce leaves.

Use the iceberg lettuce leaves as your "Taco Shell", spoon the Carnitas meat in the center of the leaf, fold over and ENJOY!!

I usually serve with steamed cauliflower ...... kind of gives it a "rice" texture and is really very tasty!

How Does NOT eating Paleo affect you??


This last weekend Steve and I had a "staycation" at a hotel at Mission Bay, along with a few of our friends. While staycating, I did my best to remain loyal to the Paleo Challenge........for the most part I was able to stay the course, EXCEPT for on small thing....BEER! Since I am NOT a wine drinker, my options for an alcoholic beverage are extremely limited!!! Like once choice, Tequila! So, not having any of that Agave plant nectar readily available, I stumbled and knocked back a few ICE COLD, MMM, GOOD BEERS! While I must admit, the first tasted, "Oh, soooo gooood!" The second and third left me wondering was it all really worth it!
After a few moments of trying to hold back the inevitable belch, I realized, NO it just isn't worth it! I felt like crap! I physically felt the affect on my body and I did not like it!! Needless to say, I made sure I had some tequila and some lemons, limes and oranges available for my Paleo Margaritas!! (My New best friend!)

Paleo Chocolate......Really????

Yep! Just ask Laura!


Now most of us realize that there may not really be a 100% Paleo chocolate bar out there, but there may be some that are pretty darn close, Close enough anyway, to satisfy that occasional need for CHOCOLATE!


I discovered these chocolate bars during a "special event" at our local Costco.



Please remember: Moderation!!!! Is best with all things Paleo or non Paleo!!! If you aren't able to exercise self control........then don't even purchase the darn chocolate bar! :-) (you know who you are!)
Be sure to read the ingredients and make an educated (non-emotional!) decision regarding the consumption of these or any other chocolate bar!
It is assumed that if you are reading this blog and you are practicing the Paleo way of eating, then you should be a somewhat intelligent person, capable of making your own decision.

Chicken Wings....Renamed: Saints Wings!

Hurray for the Saints! I love it when the underdog wins!!!

I made these but with a Paleo Twist.

The recipe calls for Agave nectar, which I had never used before, so I figured it's worth at least ONE try. Agave nectar tastes great, very similar to raw honey. Texture is a bit "smoother" more like a syrup. However, there is a bit of a controversy in the "paleo" and crossfit world over whether or not Agave is OK to use or consume. I recommend you do your own research and come to your own conclusion!

I substituted the Adobo sauce with an Organic, NO SUGAR added hot sauce.
"Arizona Peppers" Organic Harvest Chipotle Habenero Pepper Sauce.

This stuff has quite a bit of a "kick" so add just a bit at a time until desired "HOTNESS" is reached!

I also found that the longer the marinate time, the better the flavor.

Enjoy and experiment! You might just be pleasantly surprised!

Paleo Beef Jerky...

Day 32 Paleo / Zone Challenge
Today's WOD was pretty brutal, but then again, what Crossfit WOD isn't!

Who the heck thinks up some of the "exercises"....... I swear there's some sadistic person out there that spends hours, no days, trying to figure out how to torture us.....but then again, for some bizarre and unexplainable reason, I keep showing up........figure that one out!


Paleo Beef Jerky:
I became obsessed with figuring out the proper ratios and thicknesses and which meats are best for the Perfect paleo beef jerky. It turns out, every batch is different no matter what, so just wing it.....it's dried meat for heavens sake, does it really matter!

Ingredients:

Meat - I have found that Tri Tip tends to be the most tender and holds the flavors best.
(can be beef, venison, rabbit, buffalo, doesn't matter! whatever floats your boat!)
Seasonings (whatever your favs are, as long as their "paleo")
Bragg's Liquid Aminos (sm. amount of soy in it, but not enough to really matter in my opinion)
(Bragg's, adds a soy sauce like flavor to any thing,use it in salad dressings, stir fry veggies, etc)

Slice meat to desired thickness (thinner the better for drying)
Place in zip lock baggie, add 1 cup or so of the Bragg's liquid Amino's
Add Small amount of other desired seasonings ( I use Garlic and pepper)
Allow to marinate for at least 30 minutes, or longer

If using your oven, heat to 150 degrees, place meat strips on cookie sheets or baking racks, sprinkle lightly on one side only, some of your seasonings.......don't sprinkle too heavily, your jerky will be "gritty". Bake in your oven for 8 to 12 hours. You'll need to keep checking the dryness of the meat. The thinner the slices the quicker the meat will dry.

If using a dehydrator, place meat strips on racks, sprinkle with seasonings, again, not too much as it will make the jerky gritty. Turn on dehydrator to highest setting usually around 150 degrees. Check the jerky in about 4 to 4 1/2 hours. Thinner slices should be done. If sliced thicker, may need another hour or two.

Whether cooking your Jerky in the Oven or in the Dehydrator, make sure to let the Jerky cool completely before placing in an airtight container. Placing warm Jerky in the container will cause condensation, keeping the moisture in, and allow mold to grow! Mold is not our friend!

The fun is in the experimentation. I have added hot sauce to make the jerky "hot" n spicy.
Remember you can flavor the jerky with anything, as long as it's paleo.

Catina's Cookies.....mmm, good!

Day 28 Paleo / Zone Challenge

Busy weekend for me so far....... I haven't had a chance to post anything until now.

Not that I am keepin a score card or anything, but the Paleo world has a new convert!
Welcome Catina! Hoping Cat enjoys all things Paleo! (she was "in the zone" before)
Anyway, Catina is a kick butt chick at OCF in all she does, and apparently, she kicks butt in the baking category too!!
This is her Paleo Cookie recipe she served up at Friday's poker game......... Let me just say one word about these cookies.........YYYYUUUUUUMMMMMM!!!!!!!

Paleo Cookies

Ingredients:
2 cups raw honey
2 cups ground walnuts
4 cups almond flour
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/2 cup dried fruit (Cat used Raisins)

Directions:
Preheat oven to 350 degrees. Lightly grease cookie sheets, or line with parchment paper. Warm honey in a saucepan. Let mixture cool slightly. Sift together flour and spices. Place honey in mixing bowl; gradually add flour mixture and stir until well blended. Stir in dried chopped fruit.
Roll dough about 1/4-inch thick on a floured board; cut into squares and rectangles with a pastry wheel or sharp knife. (If you prefer, you can also make drop cookies, dropping the dough by teaspoonful.) Bake ten minutes. Makes four dozen.

Wanna Be Parmesan Chicken...

Day 25 Paleo / Zone Challenge

The first time I made this dish I was craving Italian food, and of course........cheese!
So, I took how I would normally have made Baked Parmesan Chicken and tweaked it, to make it Paleo.........or in other words: Wanna Be Parmesan Chicken!


Ingredients:

Skinless Boneless Chicken Breast or Tenders ( I prefer the tenders)

2 or 3 eggs, beaten

Almond Meal

Bragg's Seasonings (or Italian Herbs)

Olive Oil

Organic, Pasta Sauce (or if you're really ambitious, home made sauce!)

Optional items: Portabella Mushrooms, Black Olives

Preheat oven to 350 degrees

Heat approx. 2Tbs of Olive oil in frying pan, Mix approx. 2 cups of Almond meal with the Bragg's/Italian seasonings, and place in baggie or on a paper plate. Dip Chicken breast in beaten egg to coat, then dredge in Almond Meal mixture. Brown in olive oil for a few minutes.

In baking dish, place approx. 1/2 of the pasta sauce in the bottom of the dish. Place browned chicken on top of sauce. Sprinkle any remaining Almond meal mixture over top of Chicken, Add remaining sauce over chicken. Bake for 25 minutes,or until done. (Chicken Breast will take a bit longer than the tenders, time used is for tenders.) Optional: Add black olives before baking.

A few minutes before Chicken is done, slice and brown Mushrooms in small amount of olive oil. Use as a topping for the chicken.

I serve with Cauliflower topped with a bit of the sauce.

Note: during browning, the almond meal mixtures tends to separate from the chicken, just be flexible, and let it brown on it's own, and add to baking dish....this is what gives the dish the texture and "feel" of having cheese in it.

Veggie and Ground Pork Soup

Day 23 of Oceanside Crossfit Paleo / Zone Challenge
Day 3 of NO WOD, due to my l lower back / hip pain.......funny thing is, I don't think it's from "woding", it's from carrying my 3 month old granddaughter around on my hip!

Truly starting to enjoy cooking again, it's been a long time since I enjoyed cooking! Just ask Steve!

Here's one I have made once or twice before, always good on a cool day.


Ingredients:
1lb. or so Ground (lean) pork
1/2 Red onion (chopped)
Tbs. or so of Olive oil
2 or 3 carrots (sliced)
3 or so stalks of celery (sliced)
1/2 head of Cauliflower (chopped)
2 or so stalks of Broccoli (chopped)
Sea salt
Fresh ground pepper
Bragg's Organic spices and seasoning sprinkles (there's like 24 different spices in it)
12oz. can of organic stewed or diced tomatoes
6-8 cups Organic sodium free chicken broth

Please Note: I really don't measure much......but you know what you like and how much you like it, so just go with it......it'll be good!

In a large stock pot, add olive oil and onions, cook until onions start to become translucent, add pork, salt and pepper to taste, continue cooking until pork is no longer pink. Add Chicken broth, veggies, can of tomatoes. Add spices to taste. Simmer for about 20 to 30 minutes, or until veggies are cooked to desired tenderness.

Substitute: Beef stew meat for the pork, just cook the meat longer before adding veggies.

Broccoli Bacon Salad, Trail Mix and Paleo Margaritas! Great Party Snacks!

Paleo Broccoli Bacon Salad


Ingredients:
Couple of Bunches of Broccoli Chopped
½ Red Onion, chopped
½ lb. to 1lb. Uncured, trimmed bacon, cooked and crumbled
Approx. 2 Tbs. Raw Honey
Approx. 2 Tbs. Balsamic Vinegar or Bragg’s Apple Cider Vinegar
Organic, Mayo (with Olive oil) NO Dairy, but does have some soy
Dried Unsweetened Cranberries
Pine nuts or Raw Almond slivers
**Mix: Honey, Vinegar, Mayo and about a tsp. of water together for dressing.
Mix all ingredients together in a large bowl, let sit in fridge for about 30 minutes.


Paleo Trail Mix

NOT Zone friendly! (3 MACADAMIA NUTS = 3 FAT BLOCKS)
Ingredients:
Raw Macadamia Nuts
Raw Cashews
Raw Pistachios
Dried, unsweetened Cranberries
Organic Cocoa Nips
Organic Dark Cocoa bar (sm. Amount of soy lecithin) dairy free


Paleo Margarita


2oz. 100% Agave Tequila
Juice from Fresh squeezed Lemon and lime (1 or 2 wedges each)
Orange wedge peeled, in blender
1/2 cup fresh squeezed OJ (or any unsweetened juice)
Ice, Blend.
Drink, Enjoy!
