Lynn's Sultry Seviche........


Lynn and Chuck have become dedicated
Crossfitters over the last 6 months or so.
They fit right in with the rest of us
competitive freaks!





1 ½ Pounds of firm white fish cubed
Juice of 3 limes
¼ tsp. salt
¼ tsp. fresh ground black pepper
2 tsp. Oregano, crushed using a mortar and pestle
1 large Onion finely chopped
3 large tomatoes, diced and peeled
1 can (4ounces) diced green chilies, drained
1 jar (2 ounces) pimentos, diced and undrained
½ cup of Salsa or Taco sauce
Salt and Fresh Ground Pepper

Place cubed fish in glass, dish and squeeze lime juice on
it. Sprinkle with garlic salt and freshly ground black
pepper. Cover and refrigerate overnight.
Add all remaining ingredients, with seasoning to taste.
Mix well and refrigerate 3 more hours before serving.
Serve as a first course as you would serve a seafood
Cocktail, use as an hors d'oeuvre with tortilla chips for
Dipping, or serve as a cold seafood salad on cold, crisp
Lettuce leaves on chilled plates. Makes 6 to 8 servings.

Almond Muffins

Almond muffins

1 cup almond butter
1 cup sliced raw almonds
1 cup pure coconut milk
2 cups shredded unsweetened coconut
3 eggs
Beat and pour in muffin cups.
Cook at 400 for 15 minutes.

Lovely Laura's Pancakes...... Yum!

either way, we love her!





Laura's Yummy Paleo Pancakes!

2 tbsp melted raw butter
2 tbsp coconut or almond flour
1/4 tsp baking powder
3 eggs
1 tbsp pure maple syrup


Mix all ingredients then pour and grill. Top with pure maple syrup. I also like to add bananas or no sugar added apple sauce

Chris: IN the ZONE...Chicken Parmesean



Chris never quits, never gives in, and always gives it 110%! It's been awesome to wistness his dedication and determination!
NOTE: He has the same grimmace on his face too! (just one more freakin push up!)






4 blocks of chicken3 blocks of spinach noodles
1 block fresh spinach
4 table spoons of low sodium spaghetti sauce
1 egg
2 cups of almond meal
2 table spoons of Parmesan cheese

directions:

Preheat oven to 350 degrees. In a bowl whip the egg with a fork or whisk. In a separate bowl mix the almond meal, Parmesan cheese and Italian seasonings to taste. coat the chicken breast with the egg then roll in the almond meal until it is covered with the crumbs. Place the chicken on a cookie sheet. Put in the oven for 12 minutes flip the chicken and put back in oven for 12 more minutes.


While the chicken cooks prepare the spinach noodles.

Place the fresh spinach on a plate then the noodles on top. Then place the chicken on the noodles and the sauce on top of the chicken. sprinkle a light dusting of Parmesan cheese on it all.

Lindsay's, Paleo Ultimate Fish Tacos


Kickin some butt and taking no prisoners, Lindsay is one of the young hot chicks at OCF that keeps us old ladies on our toes! I hear she's a pretty good runner... I say "hear' because I despise running and try to hide when that word is used!







Paleo Ultimate Fish Tacos

1. 2 pounds mahi mahi (skinned, boned, and cleaned)
2. Sea salt and freshly ground pepper
3. 1/2 head savoy cabbage, finely shredded (I just used red cabbage)
4. 1 bunch cilantro
5. 3 limes, cut into wedges for garnish

Pink Chile Mayonnaise
1. 1 cup mayonnaise (make sure that it is free of soybean oil and trans fats–you could also make your own)
2. 3 chipotles in adobo, plus 2 tablespoons of the adobo sauce
3. 1/2 lemon, juiced
4. Sea salt and freshly ground black pepper

Mango Salsa
1. 1 ripe mango, peeled, pitted and diced (about 1 cup)
2. 1/2 medium red onion, finely chopped
3. 1 jalapeno chile, minced (include ribs and seeds for a hotter taste if desired)
4. 1 small cucumber
5. 2 Tbsp fresh cilantro leaves, chopped
6. 3 Tbsp fresh lime juice
7. Salt and pepper to taste

Fish. Preheat oven to 400 degrees F, and season fish with salt and pepper. Place on an ungreased baking sheet, and cook for approximately 13 minutes.

Pink Chile Mayonnaise. Dice adobes until very fine–almost a paste. Add to mayonnaise, and stir in lemon juice, salt and pepper. Refrigerate until ready to use. (Note: the original recipe called for 1 cup sour cream as well, but I simply omitted it. If I had raw sour cream on hand, I wouldn’t be afraid to add that to the recipe. Just remember that such things are not Paleo, so they should usually be avoided. My personal philosophy, however, allows limited quantities of RAW dairy such as butter and sour cream.)

Mango Salsa. Combine all ingredients in a bowl. Season to taste with salt and pepper.

Courtney's Paleo Pizza




Courtney has been at Oceanside Crossfit for a few months now and this girl seriously kicks some butt! I am definitely keeping an eye on her, it's only a matter of time before she outlifts this granny!


Ingredients

1 1/4 lb ground turkey
1 egg or egg white
2 Tbsp Almond meal
2 Tsp dried basil
Olive Oil

Preparation

Preheat oven to 450 and oil pan lightly with olive oil
Mix: Turkey, egg, almond meal and basil. Pour onto pan and press flat (about 1/2 inch thick). Bake for 10 minutes.

Add a sauce (without sugar). I used organic tomato sauce. Apparently there are pizza sauces without sugar, but I didnt find any. Use whatever veggies you like on pizza. I use fresh basil, spinach, more tomatoes, onion and mushrooms. Bake an additional 10 to 15 minutes. I top it with crushed red pepper to make it extra spicy!

Ken's Famous Beef Jerky and Crock Pot Meal....


Ken is a dedicated crossfitter at Oceanside Crossfit, who promises that if you eat his crockpot meal you won't look like this! Paleo is guaranteed to NOT make you look like this!

Beef Jerky
- Beef, slice into thin slices (London Broil is good to use, you can also use Rump Roast)
- Use any BBQ of your choice.
- Add some honey (optional)
- Add another other spices (NO SALT)
- Marinate for about 1 hr the place on dehydrator, if you don’t have one the go buy one. You can use a oven but you will have to look on line for that information
- Check on jerky about 4 hrs and then every hour after that. If you leave on to long it will be DRY DRY.

- Yes it is easy to do and takes little effort

Crock Pot Meal
- Chicken (about 3 to 4 chicken breast)
- 1 Can Stewed tomatoes with spices
- 1 can of diced tomatoes with spices
- Some baby carrots
- Some cucumbers (sliced)
- Some green and yellow squash
- Black Pepper (you can add other spices if you wish)
- Frozen Broccoli (small chucks, not the large ones)
- Put in crock pot and turn on low when you leave for work in the morning. When you return from work about 4:30ish it will be done and time to eat dinner. You can save some for lunch for the next few days.

Forgive me Paleo, for I have sinned............


Forgive me Paleo, for I have sinned! It has been a few weeks since I fell off the Paleo wagon, well not completely, but close! Amazing how life happens, schedules get changed and before you know it, old habits come back into play! For the most part, we stuck with Paleo on a daily basis until a few weeks ago. A visit to see old friends in Arizona was the beginning.....Then the was New Orleans, Jazzfest....there my friends, is the ultimate temptation of ALL things BAD! Too much good food NON paleo friendly food! Binguet's (those doughy powdered sugared evil little monsters!)Then there's jambalaya, gumbo, craw fish ettouffe (probably spelled that wrong)..the list goes on and on, not to mention Alcohol! No shortage of that in N'awlins!!!
Needless to say, here I sit, paying my penance with 5 extra pounds gained, bloating, irritability (poor Steve) and wanting to kick myself for letting this happen! But today, is a new day! Today, I make a stand, step back up on the Paleo wagon, strap myself in and prepare to enjoy the ride.......it can only get better!
Tonight is "Recipe" night at Oceanside Crossfit. We will be participating in another Paleo challenge, this one 30 days, starting 5/17 and ending 6/17. Tonight the congregation will meet and we will share our success' our failures (I will hang my head in shame appropriately) and then we will exchange recipes, take note of who says they are committing to the challenge and then spend the next week preparing and purging. Be ready to see some great new recipes posted! I looking forward getting back to normal! Stay tuned.........
