Paleo Chili

Paleo Chili
 


I usually just wing this recipe, but a friend asked for the recipe, so I'll do my best. Hope it doesn't disappoint Corey!

1 1/2 lb Organic Grass fed Beef
1/2 to 1 lb of Fresh Pork Sausage
8-10 slices Nitrate free bacon (chopped into small pieces)
2 Cans of Organic diced Tomatoes
1/2 to 3/4 of a chopped onion
1/2 cup (or so) thinly sliced/chopped carrots
2-3 chopped or pressed cloves of garlic.
1 can black olive (optional)
Cayenne Pepper, Chili Powder, Cumin, dash of Oregano, Salt, Pepper, to taste
Arrowroot, just enough to thicken Chili, if needed.

In a large pot, add bacon and onion, saute together until onion is translucent. Add garlic saute for a few minutes (careful not to burn the garlic)
Add pork sausage and beef, continue cooking until all meats are done.
Add the cans of diced tomatoes (and olives, if using them) Add all spices and simmer on low for 30 - 60 minutes. The longer the low simmer, the more the flavors fuse together.

Makes about 4-6 average size bowls of Chili.

Just a little note:
I found the thicker the crust, the more bread like it is toward the middle and tends to absorb the liquid from the sauce. Easy remedy was to spread the crust a little thinner and bake a little longer the first go around.

BBQ Sauce

Simple BBQ Sauce

Great thing is, you can easily turn up or turn down the heat on this by adjusting the chili powder and honey ratios.

1 can of Tomato Sauce (8oz)
1/4 to 1/2 onion 
2-3 garlic cloves
1tsp. ground pepper
1 Tbs. of basalmic vinegar (or apple cider vinegar)
1 Tbs. of Raw honey
1 Tbs. ground mustard

Place all ingredients in blender and blend until smooth.

Add red pepper flakes to give the sauce a little kick. OR make it a bit sweeter by reducing heat and adding pure maple syrup, just a tad (maybe a tsp.)

Homemade Mixed Berry Ice Cream

 
Homemade Mixed Berry Paleo / Primal Ice Cream
 
This recipe can be made strict Paleo by substituting Coconut Milk or Almond Milk, it just won't be quite as creamy.
 
1 Cup Heavy Whipping Cream (or Coconut milk or Almond Milk )
1 1/2 Cups of Frozen Mixed Organic Berries
1 tsp of Organic Vanilla Extract
1/8 to 1/4 cup of Coconut granules ( tastes just as good without the "sugar")
 
Add Cream, Vanilla and Coconut sugar to blender first, then add mixed frozen berries. PULSE the blender for about 30 seconds to mix the ingredients and chop the berries. Continue to blend/pulse the mixture until smooth.
 
Serve immediately for soft serve consistency. Place in freezer for 15-20 minutes for firmer ice cream consistency.

Rosemary Bacon Chicken

 

Ingredients

4 tsp garlic powder

4 boneless, skinless organic-free range chicken breasts

1/2 tsp sea salt

1/4 tsp freshly ground black pepper

4 sprigs fresh rosemary

4 thick slices bacon (should be nitrate free)

Instructions

Preheat outdoor grill for medium-high and oil grates

Season chicken breasts with garlic powder, sea salt and freshly ground black pepper.

Lay one rosemary sprig on top of each chicken breast and wrap a slice of bacon around to hold the rosemary in place. Secure each piece of bacon with a toothpick or another rosemary sprig.

Cook the breasts about 8 minutes per side on the grill, or until juices run clear and there is no pink in the middle. Can be cooked indoors as well: Heavy skillet, If you are cooking chicken in a pan on the stove, more time is needed per side. Cook until internal temperature reaches 165° F. If you are roasting chicken in the oven, place chicken on baking tray at 350F for 40 minutes, or until fully cooked.

Spiced Vanilla Cake with Spiced Rum Caramel Sauce..

Looking for a quick and easy Primal (almost Paleo) Desert?  This amazingly easy and not so bad tasting either! Definitely does the trick when craving something sweet and you really don't want to throw all your hard work out the window with Gluten and sugar!

Ingredients for the mug cake:
  • 1 pastured egg (room temperature)
  • 4 Tablespoons almond flour
  • 1 teaspoon pure vanilla extract
  • 2-3 tablespoons honey
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/8 teaspoon clove
  • 1/2 teaspoon baking soda
  • 2 teaspoons coconut oil  (I prefer palm shortening)
(If you don’t have all of the spices, a teaspoon of pumpkin pie spice will do the trick!)
Method:
Grease the mug or ramekin with the coconut oil (or palm shortening). Whisk all of the wet ingredients in the mug then add the dry ingredients and mix thoroughly. Place the mug in the microwave for about 1 minute. If the cake is still wet and sticky to the touch, place it back into the microwave for another 30 seconds (my microwave takes a minute and a half but depending on your microwave, it may take more or possibly less). Turn the mug over on to a plate. It should release easily but if not, drag a butter knife around the edge – or just eat it out of the mug! Top with Real Food Renegade Rum Caramel Sauce and sliced bananas.
Ingredients for Rum Caramel Sauce:
  • 2/3 cup of coconut palm sugar
  • 1 tablespoon water
  • 1 tablespoon butter
  • 1 tablespoon heavy cream
  • 3 tablespoons spiced rum
  • 1 teaspoon vanilla
Method:
Add the palm sugar and water and heat on medium while mixing continuously. Once the palm sugar is dissolved, add the butter, heavy cream, and vanilla. Continue to cook (about 5 minutes or so) while stirring until caramel is smooth and slightly thicker. Add the spiced rum and continue to cook for a few more minutes. Spoon over top of Spiced Vanilla Mug Cake and top with banana slices or other fruit. Eat and enjoy!

On Saturday December 8, 2012 we will be hosting two fundraisers in honor of GySgt. Justin Schmalsteig who was killed in action on December 15, 2010.  Most of us veteran OCFers had the pleasure of knowing and working out with Justin. This is our way of celebrating his life and giving back to those who have sacrificed more than we can ever repay.
On the morning of December 8th we will hold the Schmall's WOD at the gym from 8:00 a.m. - 11:00 a.m.  There will be t-shirts for pre-order and all proceeds from the sale of the shirt will go to the Tragedy Assistance Program for Survivors.   Click here to order t-shirts.
On the evening of December 8th at 5pm, we will be holding a fundraiser dinner/dancing/karaoke gathering at the Wien's Family Cellars in Temecula, CA.  Tickets are $50 per person.  You may purchase these now by clicking on the "Donate" button below.  Your receipt will be your entrance into the event.  Space is limited so if you are planning on attending purchase your tickets ASAP!!  All proceeds from the evening's festivities will also go to the Tragedy Assistance Program for Survivors

Coconut Pancakes

Coconut Pancakes

Drizzle these with honey and berries, wrap up some bacon and eggs for a Primal breakfast burrito, or just eat them plain. These things are incredibly easy to make.
Ingredients:
4 eggs
1/4 cup coconut flour
1/4 tsp vanilla extract
1 pinch nutmeg
1 pinch cinnamon
1 tablespoon honey
1/4 cup coconut milk (full fat)
Method:
Mix these ingredients and let them sit for five minutes. Oil or grease up your pan and heat over medium heat. Pour about a 1/4 cup of batter for each crepe, allowing each side to brown before flipping it.
Without accounting for toppings or cooking fat, FitDay says the whole batch amounts to:
37.2 g fat (20.9 g saturated)
42.2 g carbs (19.4 g fiber)
30.6 g protein
